It was so wonderful to be with family over the holidays. I caught myself several times beginning to give “helpful advice” and quickly zipped my lips. Of course the lip zipper didn’t work a few times, but I was better this year than in times past. This year I just enjoyed being with the people I love. I gave up on being perfect and let everyone help in their own ways. The dishes were done by other people and they were just as clean as though I had done them myself. Boy, was I dumb in years past. People are so much more important than things. I am blessed.

I love apples. They are in abundance now. Ray and I took a drive out to Front Royal, Virginia, on Sunday. It was a bit cloudy, but the leaves were still beautiful. The rolling hills have patches of yellow, red, and even a bit of green. Fall is lovely here.

On the way back, we stopped at an orchard to buy apples. We were a bit late this year so the apples in the bins didn’t look like they had been picked that morning. In fact, they looked old. But underneath, I found some fresh ones. Fresh ones have a frosty look. They aren’t shiny. When you bite into them, they crack and lovely juice flows.

We bought a bag of York apples and I just had to eat one in the car.

I love apples dipped in peanut butter and I love to use them in cooked dishes. Stay tuned for some apple recipes.

I read an advice column yesterday. The reader was a married woman who longed for her husband to give her flowers. She asked and asked, but her husband dug in his heals and refused to even consider it. The columnist told the woman to stop being so controlling and get over it. I wanted to cry. Here is what I wrote to the columnist:

“I’d like to offer a different perspective about the woman who wants flowers. I wanted flowers too. My first husband bought me jewelry that I didn’t want and didn’t like. My now husband paid attention when I said I wanted flowers. It’s 16 years since we met and I still receive flowers almost every week and am thrilled every time. He says he did a cost benefit analysis and I’m worth it. The message I receive every time I get flowers is that he was thinking about me and how he could make me feel special. Getting that message all the time is magic.”

Ray and I learned that showing love your way is great, but it’s even greater when you show love in the way the other person wants to receive it.

Some cooks, like my mother, have only one cutting board. I have a bunch. I have plastic ones that go in the dishwasher. I have a wooden one my son made in cub scouts. I have a long, thick wooden one that is carved out to have a shallow basin to catch the juice when carving meat.

When I am cooking, I don’t want my fruit and vegetables contaminated with raw meat, so I use many cutting boards when I cook. I use my plastic ones for meat, fish, and poultry, so I can wash them in the dishwasher. I also have different sizes. I have a little striped bamboo one to use when I just want to cut a single apple for my snack. I like to use a bigger wooden one for bread. Cutting boards can be very attractive to show off in your kitchen.

I just got back from taking my mother to Indiana to visit her sister. I thought traveling with mom would be a pain. Imagine trying to get an elderly woman up those metal creaky stairs into a little airplane. It was just the opposite. We got to Dulles (Washington, DC) airport and were met with a wheelchair. Mom can walk, but not too far and not very fast. We were taken to a special security check point and didn’t even have to wait. The whole trip was like that. Everywhere we went people were helpful and kind. At our destination, we were met by Lester, who had another wheelchair for mom. He took us to baggage claim and when I voiced my concern about getting mom onto the rental car shuttle, he said, “Why don’t you ask the rental car guy to bring the car to you?” I said, “Yeah. Right.”

Lester said, “Just ask.” So I did. And the car was brought to us.

Treat people with respect. Ask for what you need and you just may get it! We did.

What do college students, senior citizens, and busy people have in common? They get distracted when they cook! That’s why the rice cooker is the perfect cooking appliance. It just won’t burn up food. It cooks like mad and then, when it senses that it’s too hot, it shuts down to warm. That’s why I love my rice cookers so much. I don’t even want to think of how much food I would have burned if I cooked on the stove.

Just about anything you can cook in a pan, you can cook in a rice cooker. You just need to be sure to keep enough liquid in the pan to allow the rice cooker to stay in the “on” position. When the liquid boils off, rice cookers shut
themselves down to “warm.” When you are cooking meat or or other food that needs to be cooked to a specific
temperature to be sate, use a meat thermometer to be sure your food is cooked to the proper temperature.

None if you don’t cook. Seriously, I have a whole bunch of rice cookers. I haven’t counted lately. When I have people over for dinner, I want to spend time with my guests, not slave over a hot stove. I use my rice cookers to make my tasks easier.

My brother and sister-in-law came over for dinner on Sunday. They were dropping their dog, Abby, off for us to dog sit while they took a trip to San Francisco. I don’t get to see just them very often. Usually it’s 8 or 10 people and I don’t get to have a long conversation with anyone, so I was really looking forward to an intimate dinner with them.

Ray likes chicken drumsticks, so I came up with a new recipe. (See recipes on www.sallyskitchen.com/html/recipes.html). The chicken was done when they got there. Jasmine rice was ready in another rice cooker and all I had to do for the veggies was turn the other rice cooker on. And I could enjoy the visit. So I used 3 rice cookers for dinner on Sunday. Cleanup was a breeze.

It’s getting a bit cooler and I like soup on cooler days. A quick way to make chicken soup is to use a couple of cans of chicken broth. Add some chicken breast (I use individually frozen chicken tenders) cut into bite size pieces. Cook until the chicken is done. Add some noodles. You can use egg noodles or spaghetti. About 4 minutes before the noodles are done, add some carrots and any other veggies you have on hand. I like baby bok choy, corn, peas, turnips, red bell pepper. You can use whatever you like. You can sprinkle with Parmesan cheese, if you like. I cook my soup in my rice cooker.
